Cesanese 'Silene' 2024

Damiano Ciolli is widely credited with leading the modern quality revival of Cesanese, the main native red grape of Lazio. Located in Olevano Romano, about 45km southeast of Rome, Damiano farms naturally with biodynamic princples and uses minimal sulphur. Silene is made from 100% Cesanese, fermented and aged in concrete. Its bright and fresh with red berry fruit, earth, dried roses and aromatic spices. Perfect with the holy trinity of Roman pasta: Cacio Pepe, Carbonara and Amatriciana.
