Marco is \npart of the Ricasoli family that wrote the story of Chianti Classico, creating \nthe formula for the wine we know today at the site of what is now his San \nMarcellino vineyard. The soil here is incredibly rocky, forcing the roots deep \nand resulting in naturally low yields. Marco farms organically and has built his \nown large cisterns to gather rainwater, along with using biofuel for \nmachinery.\u003c\/p\u003eRocca di Montegrossi’s oil is produced from Coreggiolo and \nMaraiolo olives, harvested in late October. Yields are extremely low - in part \ndue to the soil, in part to the age of the trees - and the fruit is processed at \ncold temperature immediately after harvesting. The oil is luminous green with an \nintense, fruity perfume.
